Bread and Garlic dip

This is a bread sauce spiced with garlic and is delicious eaten together with beetroot salad .

Take about 1/4 of a round of bread or dark bread , cut off the crust and soak in water (you can use 4-5 boiled potatoes instead of bread) .

3-4 cloves of garlic soaked in a small coffee cup of vinegar , 1/2 a cup ground almonds , 1/2 of a cup of oil (or as much as the mixture will absorb) .

Squeeze all the water out of the soaked bread , add the chopped garlic and finely ground almonds , then the vinegar and a pinch of salt . Gradually add oil (as though you were making mayonnaise) , stirring continually . Taste for salt and add a little more vinegar if needed .

The sauce should be thick and it is usual to decorate it when serving , with finely chopped parsley . If you have a liquidiser you can put all the ingredients in at once .
