OLIVE LOAF

 1 Unbaked loaf of bread from the baker, (your grocer will bring one for you if you order it beforehand)

1 glass of half olive oil and half corn oil

1 large onion finely chopped

1, 1/2 tblsp baking powder

350gr. Black olives

If no unbaked bread is available, use the following ingredients to make the dough:

1/2 kg of bread flour

1/2 kg of cake flour

60 gr cube of fresh yeast

1 tblsp of sugar

1 tblsp of salt

2 tblsps of corn oil

 Put yeast and sugar into one cup of lukewarm water and let rise in warm place (about 15 min). Sift flour adding salt. Rub in corn oil. As soon as yeast is frothy add to flour and mix adding enough lukewarm water to make a pliable dough and knead well until it comes off your hands without difficulty.

Let rise for about an hour. Then mix in fried onions and de-stoned olives. Form one loaf or make small rock cakes, let rise again and bake in moderate oven (350-400° F 180-200° C ). The loaf will take about 3/4 of an hour and the rock cakes about 20 minutes.
